The Mandarin Salad gets its name because of the Mandarin oranges, which is one of its prime components. Different versions have been created, with the additions of almonds, bacon bits, croutons, celery, green onions and even pine nuts. The Refreshers version is quite different because of the presence of seafood—squid balls and kani slices.

The Oriental Salad, or Chinese Chicken Salad as it is more popularly known in the United States is said to have began in the 1930s. Raw vegetables weren’t popular with the Chinese because they think of it as unhealthy, so most of their vegetables were stir-fried. This became the basis of the Oriental Salad. The basic components of this salad are shredded iceberg lettuce, strips of roasted chicken, crispy fried noodles and a semi-sweet sesame oil dressing. Refreshers’ Oriental Salad is patterned after this, but instead of iceberg, romaine lettuce is used. The chicken strips are boiled instead of roasted, while the fried noodles remain, added with some fried wanton flakes. As to be noticed, most of the ingredients are signature Chinese cuisine, which all the more gives a strong Asian personality to this particular salad.

Refreshers’ Mexican Bean Salad, patterned after the spicy dishes from Mexico is a combination of these ingredients: Organic lettuce, red kidney beans, taco chips, black olives, tomatoes, onions, chicken cubes, bell pepper, and cheese. The dressing is Mexican Catalina, a slightly spicy tomato-based dressing. Notice how the ingredients in this salad resemble the ingredients of a taco. The difference is that since this is a salad, the greens here are larger in quantity, unlike in an average taco. This could also be traced back to the huge Mexican influence in America during the 1940s, where Texans adopted their cooking and such dishes were then called “Tex-Mex”, a hybrid of Texans and Mexicans.

The Sicilian Chicken Salad gets its inspiration from the culinary tastes of Sicily. Since Sicily is a wine country, the red seedless grapes provide comfort to fruit lovers. Add to this is the dried mango variation plus cashew nuts, bread croutons, and boiled chicken strips. Sicily is famous for its oranges, but Refreshers traded the oranges for mango, which blends perfectly well with grapes.

The French Nicoise Salad, or Salad Nicoise as it is more popularly called, originated from Nice, France, hence the term Nicoise. The term “nicoise” generally pertains to dishes served with specific foods used by chefs in Nice. The ‘true’ ingredients of Nicoise are still under debate, however commonly present are hard-boiled eggs, tomatoes, anchovies, black olives, green beans, and tuna. Still under debate is whether tomatoes or lettuce serve as the base for the Salad Nicoise.

Cobb Salad, which was named after its inventor Bob Cobb was created out of an experiment. The original Caesar Salad was said to be in honor of restaurateur Caesar Cardini who in 1924 invented the salad in Tijuana, Mexico. The original ingredients were romaine, garlic, boiled eggs, olive oil, parmesan cheese, Worcestershire sauce and croutons. Later his brother Alex added anchovies to the recipe. This particular salad became popular among Hollywood celebrities, who drive to Tijuana just to have a taste of this delight.
